I'm guessing microorganisms previously living under the planted area got exposed to the surface during the plant removal session hence the shrimp went into frenzy mode?

they are feeding from the mircoorgansim and baterica that when someone takes out a plant they crowd around it . Our hands has micro bacterica or organism on it so they will nibble on our hands and anything that is new to the tank
